Livorno: il pesce azzurro d’autore in ToscanaLivorno: the best bluefish in Tuscany

Una grafica accattivante, nuova per un libro di gastronomia, spazialità e luminosità fanno da cornice a 48 ricette realizzate da 13 chef stellati e altrettanti emergenti e arcinote firme della ristorazione regionale.

Il libro è l’undicesima pubblicazione di Claudio Mollo, giornalista e critico enogastronomico, attivo da molti anni ormai nella promozione dell’agroalimentare e della ristorazione di qualità. Un elegante formato quadrato di 22,5 centimetri per lato, cartonato con sovraccopertina. 120 pagine nelle quali le immagini rendono chiaramente l’idea del lavoro fatto con gli scatti dei rispettivi piatti, ma raccontano anche la filosofia dello chef e la storia del locale.

Il volume è stato presentato lunedì 8 ottobre nella sala Butterfly del Grand Hotel Principe di Piemonte a Viareggio di fronte ad oltre 100 tra chef, produttori di vino, giornalisti e altri operatori del settore.
Presente alla conferenza stampa una nota biologa marina, la dottoressa Silvia Gambaccini collaboratrice e consulente di Lega Pesca Toscana, che ha impreziosito l’evento con un bellissimo intervento sulle metodologie e le problematiche della pesca, i principi commerciali che regolano il mercato ittico e tante altre interessanti informazioni riguardo certe specie di pesci e le loro caratteristiche organolettiche.

Il dopo conferenza è proseguito con un buffet a base di finger food realizzati con il pesce azzurro dagli chef stellati, Fabrizio Girasoli del ristorante Butterfly di Marlia, Lucca; Andrea Mattei del ristorante La Magnolia di Forte dei Marmi, e il padrone di casa, Giuseppe Mancino, chef del ristorante Il Piccolo Principe, situato all’attico del Grand Hotel Principe di Piemonte.
In alternativa al pesce, uno dei più famosi artigiani dei salumi della lucchesia, Alderigo Triglia, proprietario del salumificio omonimo, situato in località Gombitelli, in alta Versilia.
